This weekend, I had my first wild mushrooms. And they were incredible.

My brother has been doing a lot of research on the subject of local mushrooms. He's bough several guide books and has been combing the woods looking for edible species.

We went out camping on Saturday, and he randomly spotted a good sized mushroom at the base of a tree. He grabbed it, and tossed it into the chicken marinade (black pepper and vinaigrette). Then we tossed it onto the grill later that night.

Holy crap. I had no clue that mushrooms could be so meaty. What a pleasure to eat. It was just amazing.

So who out there eats wild mushrooms? And how do you cook them? I have to learn this stuff.

I usually will try to get at least one during deer season to put in the freezer. I have to be careful though, if I know company is coming I have to cook something else most of the time because not everyone likes it.

...Wild turkey? We have. The only part that is any good to eat though, as far as I'm concerned, is the breast meat. My husband shot one during turkey season and we thought it would be sort of like tame turkey. Well, it's not. It's way to gamey to stand to eat it. He loved the tail though and had that mounted. But I am NOT going to bother to ever cook one again.

We took some last weekend with us to an overnight camp out and baked them in foil with brown sugar and butter! Mmmmmm. Yummy. You can even put marshmallows in them after they come out of the fire and they are super good. I could eat my weight in these.

We take either chicken or beef chunks, carrots, onion, potatoes, herbs, and butter wrap it all together in aluminum foil and throw it on the fire. It is so tasty! Lately we have started a new combination with salmon, zucchini, summer squash and Italian dressing.
