Default Buffalo?

I'm on the East coast so I have no idea whether this is possible or not, but are you still allowed to hunt buffalo? Do they have lotteries for tags like they do for some of the game here on the East coast?

Yes, several states still have buffalo draw hunts. Nephew got a nice bull buf in Utah several years ago with black powder. I know Wyoming still has hunts but not the criteria to get a permit. Idaho does not have one. You might also try Montana and Colorado.

I'm on the East Coast too but this peaked my interest. We don't have buffalo here. What does it taste like? I don't have any plans to go out West to hunt Buffalo but would love to try it.

Buffalo meat is rather common in better restaurants around here. It does not taste like chicken. It is very good, some like it better than beef, some don't. I think it is between beef and elk in flavor. There are a lot of buffalo ranches springing up now to supply restaurants with USDA certified meat. Nephew said his wild buf had a little spicier flavor than the ranch raised you get in restaurants.

Buffalo Burgers are becoming more common here. You chain restaurants are carrying it. I like the taste a lot better then the normal burgers. I've thought about trying to find some wild buffalo meet.

Most of the buffalo hunts in the US are tough to draw for on public land. It is much easier to secure a hunt on private land. None of the hunts are very challenging if the critters are around. They don't have much fear of humans esecially on private land. Many people use blackpowder guns and hunt on horseback. Archery would be a real challenge.

Buffalo meat is readily available in the Great Plains states and especially the Dakotas, Nebraska, Wyo, Mont, and Colo. I have been cooking it for 30 years and used to have an annual buffalo roast. Most people like it because it is close to beef when prepared correctly. I like Grandpa's description of it. It benefits from slow cooking with moisture like in a dutch oven on the fire. The best cuts can be grilled, but it is still lean compared to beef.
