Default easy rabbit stew

I am looking for something simple to start out with, a friend mentioned that we would do the dirty work if I learned to cook it. Challenge accepted, plus I like learning new stuff. Anyone have a nice recipe that is not too complicated for a newbie?

RABBIT STEW
1 (2 1/2 to 3 lb.) rabbit, cut up
6 peeled, sm. white onions
1 1/2 c. diced celery
4 1/2 tsp. salt
1/8 tsp. pepper
2 qts. boiling water
2 c. diced carrots
2 c. diced potatoes
1/2 c. flour
3/4 c. cold water
1 tbsp. chopped parsley

Wash and dry cleaned rabbit. Place in kettle with next 6 ingredients. Cover; simmer 2 hours or until rabbit is tender. Add potatoes; blend flour and water. Stir into stew. Cook until thickened and add parsley.

Well that sounds pretty good Hazel. I'm not a big fan of rabbit (since our kids had pet rabbits) but if I was given one all ready to cook, I would certainly try that recipe.

That recipe pretty much works for any meat, too. Very basic, high quality stew recipe. If you want super rich broth you can substitute chicken or beef stock for any amount of water.

I think basic is the key, for some reason getting used to my new stove is being a pain I think the temp gauge is freaking out on us. Stew seems like the best option. I might need to try it out with a few others thing too, still waiting on the rabbit.

I've never had rabbit before and I don't plan on eating it. I'm glad the recipe is really good for any meat. I could try it with chicken or beef. I don't know about you, but there is something too cute about rabbits.

This sounds like a great and easy recipe for rabbit stew! We are going to start raising rabbits come the Spring so this will come in handy!
