Default Best Pancake recipe?

We love pancakes and I'm always looking for new recipes to use. Would anyone like to share theirs? What is the best one you have and like to make while camping? We love banana nut pancakes.

Buckwheat Cakes!

Ingredients
Vegetable oil for coating the pan
1.5 cups (200g or 7 oz) buckwheat flour
3 Tbsp sugar
1/2 teaspoon salt
1 teaspoon baking soda
3 Tbsp unsalted butter, melted
1 egg
2 cups (475 ml) buttermilk
OPTIONAL : 1/4 tsp cinnamon powder and/or 1/2 tsp vanilla extract


Method

1 Heat a well-seasoned griddle, cast iron skillet, or stick-free pan on medium heat. The pan or griddle should be ready for the batter as soon as it is mixed.

2 Whisk together the dry ingredients—the flour, sugar, salt, baking soda—in a large bowl. Pour the melted butter over the dry ingredients and start stirring. Beat the egg with a fork and stir it into half of the buttermilk. Add the buttermilk/egg mixture to the dry ingredients, then slowly add in the rest of the buttermilk as needed to get to the right consistency for your batter (you may not need all of the buttermilk, depending on what type of buttermilk you are using and the brand of flour). Stir only until everything is combined. Do not overmix. A few lumps are fine.

3 Put a small amount (a half teaspoon) of vegetable oil on the pan or griddle and spread it around with a paper towel to coat. Ladle the batter onto the hot surface to the desired size, about 4-5 inches wide. (A 1/4 cup measure will ladle about a 4-inch pancake.) Reduce the heat to medium-low. Allow the pancake to cook for 2-3 minutes on this first side. Watch for bubbles on the surface of the pancake. When air bubbles start to rise to the surface at the center of the pancake, flip the pancake. Cook for another 1-2 minutes, or until nicely browned.

4 Keep your pancakes warm on a rack in the oven set on "warm," or stack them on a plate and cover with a towel as you make more. Spread more oil on the pan as needed between batches of pancakes.

Serve with butter and maple syrup. Apple butter is very good on these as well!

Yield: Makes 14 to 15 4-inch pancakes, serves 2-3.

I don't really have a recipe all professionally done like the one above, but I use the regular pancake mix you buy in the box, and I add milk, butter, sugar, and even some maple syrup into the batter before I put them on the skillet. They are very good.

I cheated a bit on that and copied and pasted it ;-).

If I'm in a hurry, I just use bisquick like the box says and add a dash of cinnamon or nutmeg.

3/4 cup whole wheat flour
1 cup unbleached white flour
2 tblsp sugar
1 tsp backing soda
2 tsp baking powder
1/2 tsp salt
1 cup blueberries (optional)
2 eggs
2 cups buttermilk
1/4 cup oil

Mix dry ingredients in 1 bowl, wet in another, pour dry into wet and stir until large lumps are gone.

I'll have to try the buckwheat recipe. I do love buckwheat pancakes

I make pancakes all the time but have never thought of putting maple syrup in the mix. I'll have to try a little next time to see how they come out. It's got to give it a really good flavor. Thanks for the idea FreeWilly.

Hey, no problem Linda. I would add sugar too. It adds a lot to the flavor. Actually, I prefer French toast over pancakes. if you add melted butter to the mix and sugar they are so delicious. You can also add cinnimon too, but I prefer the other way. I think thats the best tasting thing I cook.

Not sure I could handle the Buckwheat as it seems like an acquired taste but I would check out the other one. I wish I could remember my Gram's recipe, we always told her that she should open a restaurant.
