Now that we were talking about it, I thought I would post my recipe for chili. I use two cans of chili beans (whichever burn factor you prefer-LOL). I use mild chili beans and then add chili powder to the strength you prefer. Then I put in hamburger, onions and two large containers of tomato juice. I add salt and that's just about it. I let it simmer until the hamburger is cooked and the onions are translucent. I will usually taste it then to see if it's done. You will be able to taste when it's done. I serve mine with cheddar cheese on top and soda crackers or cornbread whichever whoever is eating it prefers.

Here's a link to my recipe for a Chili Cornbread Bake using a 10" Camp Dutch Oven.

Its easy and quick. Great for any camping trip.

Chili Cornbread Bake

If more heat is needed, add red pepper flakes or add hot sauce to your bowl at serving time, do not add more chili powder.

Top it off with a dollop of sour cream and diced green onions.

I always put in cheddar cheese, saltine crackers and a scoop of sour cream. I started using the sour cream when my hubby started to make the chili too spicy for me.

It is sort of getting to be chili weather isn't it? I have been thinking about vegetable beef soup and chili for a couple of weeks now. When the nights start getting a bit chilly I want to drag out the soup pot and fill it full!

Slight variation on the recipe in the first post: Replace on can of beans with a can of corn (not the sweetened kind). When you serve it, add some shredded cheese and/or a dollop of sour cream.

I do tend to use ground turkey instead of ground beef nowadays. I find the taste to be very similar, and it has a bunch less fat. It also often goes on sale for like two bucks a pound, which is nice.
