Default Cooking Over An Open Fire

I love the taste of food cooked over an open fire. The smoke just gives meat especially such a unique flavor. One thing I do have trouble with is getting potatoes to cook quickly enough without burning the heck out of them. I've tried tinfoil but they seem to take a lot longer than meat. Any suggestions?

We actually make a small campfire in the back yard and cook hot dogs and hamburgers. They always seem to taste better that way. As to the potatoes, you might try cutting them up in small chunks (with some onions) and use a fry pan to cook them up that way.

If you use tin foil, before wrapping them, take a barbeque fork and poke some deep holes into the potato. This will help it cook a bit faster. Then cover it with seasoned butter and wrap it in the foil. Place it in the coals at the edge of the fire. If you have a knife or skewer, poke it every once in a while. When the knife slides easily into the spud, it's done. It's still going to take longer than meat to cook. So put it on early.
