Default Diabetic camping recipes

So we are going on a group camping trip and I just found out that 2 of the men are Diabetic. I don't know anything about what they can eat. Of course I will ask them, but does anyone have any good camping foods for diabetics?

My type I diabetic husband does not require any special diet considerations. At home, I try to cook with whole grains, lean proteins, and lots of veggies, but when other people are cooking, he eats whatever is offered and just uses insulin as needed to compensate for his carbohydrate intake. Some yype II diabetics who don't use insulin would need to be more careful about their diet, but any foods with proteins, veggies, and complex carbs (whole grains, high fiber as opposed to refined flours and simple sugars) would be appropriate.

Nothing white such as potatoes, rice, corn chips or anything with processed flour & corn.
Substitute sweet potatoes instead of baked potatoes.
Meat and "greens" are good to go.
