Default Does anyone here batter fry onion rings?

I love these but just can't seem to mix up a good batter to fry them in. They just don't come out good at all. Does any one have a good batter that they use and don't mind sharing? I would certainly appreciate it.

2 cups all-purpose flour
1 egg, beaten
2 teaspoons dried parsley
2 teaspoons garlic powder
2 teaspoons dried oregano
salt and pepper to taste
1 cup beer
3 large onions, sliced into rings
1 cup oil for frying

Directions

In a shallow bowl combine flour, egg, parsley, garlic powder, oregano, salt and pepper. Gradually add beer, stirring, until a thick batter forms. Add more or less beer depending on the desired consistency of the batter.
In a heavy frying pan heat oil (adjust amount, depending on the size of your pan, so that you have a couple of inches of oil) over medium-high heat. When oil is hot, dip onions in batter and fry, turning once to brown evenly on both sides. Drain on paper towels.

Hazel thanks for sharing that it sounds delicious. I have been looking for a good onion ring recipe myself. I will have to give this a try.

Thank you Hazel! That sounds like a really good and easy recipe (as long as I can get someone to give up a cup of beer!) I will give that one a try and see how it goes.

Awesome, I'm going to try it too. I did not know that onion rings were fried with any beer. I knew that when you ordered a fish fry it is beer battered, guess I did not think about other batters being the same.

I used to go to a little place in WA on Rt 2 below Stevens Pass called Zeke's Drive-In. He had the best onion rings of all time. They tasted like they were fried in tempura batter. On afternoons on weekends when the place was jammed, Zeke would get on the loud speaker and announce- " We're behind on o rings and we won't take any more orders until 4 o'clock." That made everyone want his o rings even more.
