Default Flat Iron Steak

Have you ever had one of these before? We had some a few weeks ago and they are SO good. About to go fire up the grill and throw on some more!

I have no idea what it is actually, can you explain a little more? Our guys in the house love anything steak so this might be something to put on the menu for next week.

I have had them before, but I am not sure what part of the cow the steak is cut from. I do know that they cannot be cooked well done. They are too tough if you do that. They are supposed to be served in the medium range.

My farmer/butcher talked me into one once - grilled it up and made a bleu cheese butter to go on top....yum!

I had never heard of this cut until about a year ago.
We 'do it' once a week now.
Get the grill really hot, 3 1/2 minutes per side.
Charred on the outside, rare in the middle.
It is the best.

Got some left over ? On the following day, slice it thin and make a steak salad.

If we ever have some left over I will definitely try the steak salad Red Dog. Now our grocery store got us hooked and they haven't had any in the last few weeks.

Hey, try this marinade:

1/4 cup Balsamic Vinegar
2 1/2 T Olive oil
1 t Parsley
1/2 t chives
1/2 t Salt
3/4 t Pepper
1/4 t Mustard Powder
Some minced Garlic

Marinate in a shallow dish for about 45 min to 1 hour each side

We use this for other meats too, but it is really awesome with those Flat Irons

Caution: With that oil, you can expect some grill flare-ups. It's okay, just make sure your grill tools have LONG handles

Those sound interesting and I haven't heard of them before. Do you ask the butcher at the grocery store for a 'flat iron steak cut'? Not sure what kind of cut I'm looking for. I'm assuming it is one of the cheaper cuts?
