The vitamin C idea seems really cool. I agree that when camping it works better to cut fruit when you are about to eat it. Anything that you are going to cut into fruit salad should last just fine in a cooler so long as it still has its peel (most of them should even last a decent amount of time outside of the cooler).

we take some dried fruits, but for fresh, the usual; apples, oranges, bananas & grapes. we only keep the grapes in the ice chest, so that saves on space
