| I don't have a single favorite because every trip is different. Most of the time when I'm camping I'm backpacking, so the keys are light weight, compact and quick cooking. So I have a variety of recipes based on ramen noodles, mashed potato flakes, instant rice and couscous. But if it is just an overniter then I'll precook pork ribs, wrap them in foil and freeze them. They'll thaw during the first day's hike then I just toss the foil packages in the fire to re-heat. Yum!
If we're canoe camping we can be more flexible. If there are no portages I even bring a cooler and portable grill so the sky is the limit. Marinated skirt steak is a favorite. Good knockwurst, bratwurst or kielbasi (I have the BEST Polish deli near my house) or grilled fresh chorizo or Italian sausage are always enjoyable. Oh and chicken of course. I love boneless or bone-in chicken thighs. I'll either marinate them or use a dry rub and throw them on the grill.
