Default Potatoes and eggs

This is one of my favorite meals camping and at home for breakfast or any time. I love frying up some potatoes and then scrambling some eggs in the pan with a little cheese and onions.

I like to fry up some bacon, then fry up some potatoes and onions (tip- fry the potatoes first til they are almost done, then add the onions, because they cook fast and you don't want to burn them) in the bacon grease with a nice slug of black pepper.

I then scramble some eggs with colby jack or sharp cheddar cheese and some of the bacon crumbled up in it. Add some biscuits with butter and strawberry jam and you have a real power breakfast!

I love potatoes and eggs and we have them at home almost every weekend at least once. Sometimes we have it for dinner during the week too when nothing else sounds good.

Well all of these sound pretty good! I really like the potatoes, bacon, onions and eggs. I'm not a big cheese eater so I'd leave the cheese out.

A lot of folks would go "ewwww", but scrambling up some roe in with the eggs and cheese is excellent. I love to do that camping in the spring when I catch spawning bluegills.

Don't for get to make some hash browns too. I love them with a lot of butter. My favorite meal is scrambled eggs with garlic powder. It may seem weird, but ever since my brother use to do it when we were kids, I can't cook them without it. It just gives a great flavor to the eggs. I also like bacon with my meal too. Toast too if there is power at the site, which there always is at the places I've gone to.

I have a neat little toaster that sits over the burner of a Coleman stove- it's made of sheet metal and will let you toast 4 slices of bread at a time. I can always have toast!

Mmmmmmmm, bacon!! That does sound really good. I'd rather have the toast though instead of biscuits. I think I'd rather have it for supper too. We may have to hit up the local Huddle House.
