Default Roasted veggies

One of our favorite things to eat at home in the summer is grilled veggies. We even roast veggies over a campfire when we are camping. Do you do this? Do you marinate them first? I usually will do the prep at home (cut up and put in dressing) and then when we are ready to roast them we put them on skewers. Have you tried this?

We don't usually bother with veggies when camping but at home I wrap them in tin foil and stick them on the grill when the meat is almost done.

I do it both ways. Sometines we marinate them, but mostly just brush them with a little oil and do them as kabobs.

Sometimes we put them in a foil pouch with a little butter and cook them that way.

All of the above! Grilled veggies are perhaps my favorites with any seasoning sprinkled and a little EVOO.

We love to grill veggies all the time. Especially when we are camping as it is so easy to do. You can cut them up before you leave or just do it when you are at the campground. We slice in large slices and brush with Olive Oil and seasonings and grill.
