Default Storage Of Salt Pork

Does modern salt pork have enough sodium in it to keep it edible during a backpacking trip? What if you were to dry it, would that keep it better?

Hi...

I've never tried to keep salt pork on a backpacking trip for any time (other than that which is mentioned below). Do you use any frozen-type items/ice packs to help keep it fresh longer?

The only experience I've had with it is: NEVER store it in a spring, or other cool water source. All of the flavor/salt will leach out of it...and it will taste blah.

I don't think they put enough salt to preserve it any more. It's sort of just a name now. I do remember my grandfather making our own salt pork and we would just go out into the smokehouse and hack some off to cook. That type could keep all winter.

How long are you going to be out, and in what kind of weather? I've carried ham, sausage, and various lunch meats for a couple of days with no trouble, and for several days in cooler temps.

I have never carried it myself but I would like to know the answer. Husband loves it and the only reason we never brought any is because we worked it wouldn't sit well.
