Default Cowboy Mac and Cheese

I haven't made this one camping before, but you could easily do it in a dutch oven. My little one loves to have this for dinner all the time!

Ingredients:
1 (14 ounce) package macaroni and cheese
1 pound extra-lean ground beef
1 (10 ounce) can canned whole kernel corn
1 (6 ounce) can tomato paste
1 (10 ounce) can tomato sauce
3 tablespoons grated Parmesan cheese (optional)
3 Bell peppers cut
2 Jalapeno peppers

Directions:
1. Preheat the oven to 450 degrees F (220 degrees C). Prepare the macaroni and cheese according to the directions on the package.
2. Brown the ground beef and peppers in a skillet over medium heat until the meat is no longer pink. Drain excess grease.
3. In a 2 quart casserole dish, combine the macaroni and cheese, ground beef, tomato paste, tomato sauce, and peppers, and corn with its liquid. Mix well.
4. Bake for 20 to 25 minutes in the preheated oven, or until heated through. Top with grated Parmesan cheese, if desired.

That sounds really good and it sounds like something I could make in a large quantity and freeze for our dinners later. Have you ever frozen any of it? Lasagna is noodles and ground beef and I know that can be frozen.

Oh this does sound good. And I bet you could make up batches of it to freeze and take some camping with you. All you would need to do is warm it up and how good it would be!

Sounds like Goulash. But then goulash is Hungarian and actually pronounced something like goolee-osh and translates "cowboy stew".

That does sound pretty good. And the thought of being able to make up extra and freezing for later on sounds even better. It would be good to have some already made up to take along with you camping.

I always like to make things that I can have some extra to freeze for later and this sounds like it would be really good to do. It also sounds like it would be quite tasty too.

Sounds pretty good and easy to make too. I will certainly try it next time we go camping. Right now we are at the beach and I am chilling. I would make it at home too.

I doubt that I could hack the Jalapeno's but the rest sounds great. Maybe when I put it together I could just half it and have one side with the Jalapeno's for everyone else but me.

That sounds delicious. I may have to try this one out at home first. I bet it would freeze very well. You could take packets in serving sizes and put them in the cooler to use for later.

Made this over the weekend (at home) and it turned out well. We did a double batch so half is in the freezer. I'll let you know how they turned out later.
