Default Fish Recipes

I noticed the thread on catch and release of fish in another part of the forum. Say you have the fish and they are too damaged. How are you going to cook them? Post any good recipes here.

We dredge them in flour, then an egg wash and then in panko bread crumbs and place in about an inch of oil in a large skillet. Fry until golden and cooked through.

1) put fillets in a mix of egg and milk (or cream).
mix up flour or bisquick, cornmeal, old bay seasoning, garlic powder & cayenne pepper.
roll fillets in dry mix
fry in hot vegetable (not olive) oil until crispy
serve w/ sliced tomatoes, corn, potato salad or about anything else you fancy

2) soak fillets in milk, salt, a splash of liquid smoke and black pepper (can even leave them overnight in the fridge if you want to)
fry up some chopped bacon
add a stick of butter, let melt
saute thin sliced onions
when the onions have gotten translucent, add mustard and black pepper
after a few minutes, reduce the heat to low and add milk to about an inch
stir until milk is heated but not boiling
drain fillets and put into milk/onion sauce
cook until fillets are done (a few minutes)
serve w/ boiled potatoes and apple pie

3) get an green smokey applewood fire going in the kettle grill
cook up whatever vegies you like to eat (Ken's Italian dressing is a great marinade)
ease down the heat a bit
make a foil tray of about three layers of foil big enough for your salmon fillets
sprinkle salmon w/ salt & lemon pepper
melt butter in tray on grill toss on salmon, give it a little squirt of dressing or marinade
cover and cook for a few minutes until done

I make this recipe at home all the time - I think it would be good for any white fish and you could easily cook it all the way in the skillet without having to bake it.
Barlow's Blackened Catfish Recipe - Allrecipes.com

Ingredients
2 teaspoons cayenne pepper
2 teaspoons lemon pepper
2 teaspoons garlic powder
2 teaspoons salt
2 teaspoons pepper
1 pound catfish fillets
2 tablespoons butter
1 cup Italian-style salad dressing
Directions
1.Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
2.In a shallow, medium bowl, mix cayenne pepper, lemon pepper, garlic powder, salt and pepper.
3.Brush both sides of catfish fillets with butter. Rub fillets with the cayenne pepper mixture on both sides.
4.Heat a large heavy skillet over medium-high heat until really hot. Add fillets, and fry approximately 2 minutes on each side, until slightly blackened.
5.Arrange blackened fillets in a single layer in the prepared baking dish, and coat with Italian-style salad dressing. Bake 30 to 35 minutes in the preheated oven, until fish is easily flaked with a fork.

? What do you mean by this? If the meat looks unhealthy I don't eat it, if it looks like there is an infection on the skin I don't eat it just throw it back.


I only eat healthy fish,

1) egg
2) southern crispy fish fry + Italian bread crumbs, SMOKED paprika, garlic salt.

Fry until crisp, eat while hot.


America is not the land of (get everything you don't deserve) Its the land the (work your ass off and make your own way), if you don't like it go to china, they have free health care and 1$ a day wages.

I assume they meant if it appears the fish won't survive the release part of "catch and release" and you decide to keep it.

My most used recipes:

1) Mix cornmeal, black pepper and a dash of cayenne in a zip-loc bag. Shake fresh filets in the mix. Deep fry for about 1-1.5 minutes, or pan fry in about an inch of oil for about 30 seconds on each side.

2) Mince a few pieces of a white onion very fine. Saute the onions in clarified butter just until clear. Add the sauteed onions to more clarified butter and brush or dip filets. Cook on grill until filet just turns white.


3) Mix cornmeal with beer, an egg + about one tablespoon prepared mustard and a dash of cayenne or Tabasco sauce and some minced onion to taste, to make a fairly thin batter. Dip filets and deep fry or pan fry as above.

You can also use the batter to make hush puppies.

Serve with fresh coleslaw.
Dill sauce for filets. Take mayonaise and add dill seasoning (I prefer Pampered Chef All-purpose Dill mix, but any good one will do) to taste. A few drops of lemon juice can be added too. Serve over fresh-cooked filets .

This works well at home with an oven. Dampen fish fillets with a bit of milk or water, shake in a bag of seasoned breadcrumbs til covered well on both sides. Put the fillets in a 9x13 baking pan that has been sprayed with spam or veg oil, shake well with grated parm cheese. Bake @ 350 for 15 minutes, turn filletts over and bake til browned. About 15 or 20 more minutes.
