Default Layered Fish

I found a recipe the other day when I was looking for fish ideas. First you take an onion and slice it in rings, peel potatoes and slice in thin slices. You can also use summer squash if you want, it's just a variation. Place a pat of butter and some lemon pepper on the bottom of a foil packet. Then layer potatoes, summer squash, onion, and fish in several layers. Top with another bit of butter, salt and lemon pepper and place on the grill to SLOWLY cook so it needs to be away from the flames as far as possible so it can simmer. I haven't tried it yet, but it sounds pretty good.

Oh it does sound like it would be really good and I am going to try it this week end! I imagine if you have a top shelf on your grill you could put it there and let it cook since it would be high up. Thanks for sharing this.

That sounds delicious! I'll have to try this one. I wonder how it would work if you were to use thinly sliced zucchini along with the yellow squash? I'm sure there could be quite a few variations if you sat and thought of it.

I love the idea of this and it sounds so easy too! Oh Scotty, I think Zucchini added to it would work great. It does sound like you could vary it a lot of ways according to what you like.

I'm always looking for easy ways of cooking, especially fish since I really don't like to fry it unless outside. This sounds so good and I do believe also that you could vary it according to your own taste.

I've been doing this for quite a few years. Make the foil packet big so there is air on top. Use a knife and punch a bunch of holes in the top of the foil and some in the bottom for drainage unless you want soup. Takes about thirty minutes and you can put other vegetables in with it like celery, asparagus, tomato wedges and broccoli. Don't forget the garlic.
