Yep, short term meat preservation has been around for a long long time. People ate meat well before electricity was available. Smoked meat, dried meat, salted meat.

And don't forget bison on that list, ppine. Bison were a big one until they were hunted down by immigrants.

Chad,

Thank-you for mentioning bison. It was a primary meat source on the plains, and there are many famous buffalo jumps that were used to drive them to their deaths. Nevada is pretty dry by comparison and they were not ever around here much.

I have cooked buffalo for Thanksgiving on many occassions in a Dutch oven. It is truly the American meat.

Does anyone have experience with Clovis points?

I'm lucky enough to be within 90 minutes of a really "exotic" meat store. I can get nearly anything cryopacked. It leads to a lot of interesting things to try.

"Dude, this cheeseburger is AMAZING. What did you do to it?"
Nothing, just grilled it right and used good meat.
"No way, mine never come out like this, no matter what % hamburger I buy."
Well, keep trying, you'll get it.
"Seriously... never had a burger like this. What's the deal?"
It's kangaroo.
"What?! Are you serious? Ew! What the hell, man!"

There's a wild game meat store close to where I live but never stopped in there. I'll have to give this a try some time.

The Healthy Buffalo of NH, buffalo meats, bison meats, ostrich meats, wild boar meats, alligator meats, venison, and more!

That's the one I stop in at when I'm in the area. Love that place.
