I'm a loner for the most part when I'm out and about.
Sitting at an open campfire near a picturesque lake and chugging back a freshly brewed coffee is my kind of high.

It's on occasions like this I like to make an uncomplicated, straightforward one-skillet meal.
It's easy and the cleanup is easy too.
As an example, I take two one-inch thick pork chops and brown them using a bit of butter.
I smother them with undiluted mushroom soup.
Use two small cans or one large can.
I then throw in fresh sliced white potatoes or canned potatoes and mix well.
I toss in some cut sweet onion.
Some may want to sprinkle salt and pepper but I usually don't.
I cover my cast iron fryer with a glass cover and watch my meal bubble to perfection.
When it's done and ready to go I put a good helping of "peaches and cream"
sweet corn Nibblets into the side with a pat of butter.
I leave it all right in the pan - that way nothing gets cold.
I top it all off with a large slice of crusty bread for easy dipping into the sauce.
Fast, simple, and oh-so-delicious.

Last night on a fire at the backyard campsite I made Hot Rod Chicken.
Breasts and boneless thighs browned in olive oil with garlic, Then saute some onions, mushrooms and green pepper in the same pan.
Then add some Hatch's red enchilada sauce, can of stewed tomatoes and some black olives.
Let it cook on low heat for awhile.
Good with a small salad and squishy bread.
You can float some red ristra chiles if you have them.
