I'm getting ready for cooking out during the summer season...okay I was ready last summer for this summer and every possible summer that comes my way.

Anyway...I was looking up new quick simple recipes. Wha...........t? One "simple" recipe had sixteen ingredients. Are you kidding me? Ya, call that simple? I was lucky to pick up a cookbook in a used book store that I'm having fun with.

Here is one that I tried.

Crispy-Baked Chicken

1 cup crushed potato chips
1 1/4 cups of shredded Parmesan cheese
4 chicken parts
1/2 quantity of Garlic Butter

Mix crushed chips with cheese and freshly ground black pepper to taste. [Wait a minute - is this a fifth ingredient?] Spread onto a sheet of waxed paper or aluminum foil. Brush chicken with half the butter. Press chicken into crumb mixture. Transfer chicken to a cookie sheet or shallow ovenproof dish. Drizzle over remaining butter. Bake in a preheated oven. 350 F for 45 minutes to 1 hour, or until chicken is cooked through and tender. Makes 4 servings. Let me know how you make out.
