Chili rice skillet

Someone passed this recipe along to me because they know we like easy campfire meals, but I made it on the stove the other night. I added sliced jalapenos and topped it with sour cream when we made it.

1 pound(s) ground beef
4 c Uncle Ben's Quick brand rice
3 c water
1 c chopped onion
1 large green pepper, chopped
1 package chili seasoning mix
1 can tomatoes, undrained
1 can kidney beans, drained
1 Tbsp salt
1 c shredded Cheddar

In a large skillet, brown meat, drain. Add remaining ingredients except cheese; stir. Bring to a vigorous boil. Cover tightly. Simmer about 5 minutes or until desired consistency. Sprinkle with cheese.

That sounds like it would be really good and also quick and easy to fix. I have printed it out and will give it a try. I love these kinds of recipes camping or at home.

Sounds great! I will try it at home too. I'm not going to be adventurous like you though, I'll skip the peppers! I'm into spicy but not burn my mouth off spicy!

I actually think it might benefit from a little cumin too, if you wanted to give it more of a mexican type flavor. Next time I make it I am going to use some Rotel style tomatoes in it, instead of plain diced.
