I always cook over coals and manage them from a camp fire. We always have built a camp fire, and transferred coals as needed to a cooking grate. Coals are shoveled as needed. Lately I have been using one of those big charcoal lighter chimneys to get started then add or subtract coals as needed.

...okay. But I like I tad of flames when I hang a chicken over the pit. When I bake bread in my Dutch oven I also use the open flame to my advantage. I frequently use a home made stove out of a can and use the twigs that creates a small but steady flame to assure balanced heat.
