There not bad slow roasted with a barbecue sauce on them. I use apple in my barbecue sauce so it makes the sauce sweet. Makes the meat sweet too. Groundhogs are really clean meat. They are vegetarians and will skin your garden slick, if you don't shoot them first.
My cousin just told me that they trapped a woodchuck last weekend. They then shot it, skinned it and boiled it. I can't imagine! I asked if his wife let him cook it in the house and he said "NO way!". They had to boil it on the camping stove in the garage. There is no way I would eat woodchuck! Do you trap or hunt woodchuck and why?
I think there are a lot of squemish eaters out there today. There was a time and place where ppl ate what they could shoot or catch. A ground hog is a clean grass and weed eating animal. You don't even want to know what that chicken you buy in the grocery store has been fed.
